Seed oils have become one of the most controversial foods on social media. Canola, soybean, corn, sunflower, safflower, grapeseed, and similar oils are often blamed for inflammation, weight gain, “toxins,” and chronic disease.
But when you separate those claims from the broader food environment, the evidence looks much less dramatic. Current cardiovascular nutrition reviews and major heart-health organizations generally support replacing foods high in saturated fat—such as butter, lard, beef tallow, palm oil, and coconut oil—with liquid plant oils rich in unsaturated fat.
The short answer: for most people, there is no good evidence that seed oils are inherently harmful when used in normal cooking amounts. In fact, replacing saturated fats with unsaturated plant oils is associated with better blood lipid profiles and lower cardiovascular risk.

Is beef tallow healthier than seed oil?

Beef tallow contains much more saturated fat than most common seed oils. The 2026 JACC review concluded that beef tallow raises LDL cholesterol compared with unsaturated oils and found no compelling evidence that it is a healthier cooking fat.
The same general principle applies to butter and lard: if you replace an oil rich in unsaturated fat with a fat high in saturated fat, LDL cholesterol will usually move in the wrong direction.
This does not mean butter or beef tallow can never be eaten. It means they should not be promoted as automatically healthier replacements for liquid plant oils.
What about canola oil specifically?
