Brown eggs often look a little more “farm fresh” on the grocery shelf, while white eggs can seem more ordinary. That visual difference has helped create a stubborn belief that brown eggs are naturally healthier, more nutritious, or higher quality.
But shell color is not a nutrition grade. According to the U.S. Department of Agriculture (USDA), the breed of the hen determines shell color, and nutrient levels are not significantly different between white and brown shell eggs.
That means the useful question is not “Which color is healthier?” It is “What should I actually compare when I am choosing a carton?” Once shell color is taken out of the equation, factors such as egg size, grade, price, specialty nutrition claims, production labels, refrigeration, and shell condition become much more useful.
Why Are Some Eggs Brown and Others White?
The main reason is genetics. Different breeds of chickens lay eggs with different shell colors. USDA guidance specifically notes that the breed of the hen determines shell color. Some hens lay white eggs, others lay shades of brown, and certain breeds can even produce blue or greenish shells.
The pigment is part of the shell, not a sign that the inside contains a different class of food. A brown shell does not automatically mean the hen was raised outdoors, fed an organic diet, or given a more nutritious feed. Likewise, a white shell does not tell you that the hen was raised in a conventional housing system.

The important distinction is that egg nutrition can vary for reasons other than shell color. Hen feed, egg size, and specialty enrichment can influence certain nutrients. An omega-3-enriched egg, for example, is intentionally produced to have a different fatty-acid profile. Why Do Brown Eggs Sometimes Cost More?

What Does Egg Grade Mean, Then?
Shell color and egg grade are completely different. USDA grades describe quality characteristics such as the condition of the shell and the quality of the yolk and egg white. Consumer grades include U.S. Grade AA, A, and B.

A grade is not a statement that one color is healthier. Both brown and white eggs can meet the same quality grade. A darker yolk can create a similar impression: darker must mean richer, fresher, or more nutritious. USDA explains that yolk color varies largely with the hen’s diet. Yellow-orange plant pigments in feed can produce a darker yellow yolk, while a different feed can result in a lighter color.
That makes yolk color useful as a clue about feed pigments, but not as a universal score for overall nutrition. A deep-orange yolk should not be treated as proof that the egg contains more protein, is safer, or is automatically superior in every nutrient.
The same logic applies to shell color. Appearance can tell you something about the hen or her diet, but it is easy to stretch that clue too far. When the goal is nutrition, use nutrition information. When the goal is production method, use production labels. When the goal is quality for cooking, grade and freshness are more relevant.
Safety Matters More Than Shell Color
Brown and white eggs need the same food-safety care. FDA advises buying eggs from a refrigerated case, checking that shells are clean and not cracked, and refrigerating them promptly at 40°F or below. USDA similarly recommends keeping refrigerated eggs cold and storing them in their carton in the coldest part of the refrigerator rather than in the door.
Shell color does not protect an egg from Salmonella. Clean, unbroken shell eggs can still contain harmful bacteria, so safe handling and cooking recommendations apply regardless of color. FDA advises cooking eggs until both the yolk and white are firm and cooking egg-containing dishes thoroughly.
